Capsicum annuum
Pequin is a Mexican chili that in most cases grows as a wild plant, and the most important reason for this is that birds love to eat these small fruits (the heat of capsaicin does not affect them). Accordingly, one of the names for this pepper is bird chilies.
STRENGTH: 40,000 - 60,000 SHU (quite hot)
FLAVOR
Pequin chili pepper is no bigger than a pea, oval, bright red in color, fragrant, complex flavor with fruity tones.
PURCHASE AND STORAGE

USE IN COOKING
This is a great pepper for salsas, hot sauces, oils and vinegars, and soups. It is quite hot so use it carefully.
Due to its size, it can be placed in a pepper mill and used as needed.
