Aioli is a traditional Spanish sauce that has spread in various versions throughout the Mediterranean. It is originally made from olive oil and garlic.
Aioli pairs well with seafood as a sauce, accompanies eggs nicely, and is often enjoyed with tomatoes or added as a topping for burgers. In Spain, Aioli is served with roasted lamb and grilled vegetables, while in France, it is commonly served with fish dishes.
