1. Heat the oven to 180 degrees.
2. Butter a baking tray in which you can place the cherries in a single layer.
3. Drizzle lemon juice over the cherries, add lemon zest and 60 g of sugar. Mix everything well and put it in the preheated oven for 15 minutes.
4. Take out the cherries and cool them down. Separate the syrup that they released into a separate bowl.
5. Separate the yolks from the whites. Beat the egg yolks with 3 tablespoons of sugar and vanilla. Add flour, salt, almond extract and sweet cream.
6. Beat the egg whites into soft snow and mix into the yolks.
7. Coat a round pie mold with butter, lay out the cooled baked cherries and pour the batter on them, which must be slightly thicker than that for pancakes.
8. Bake for about twenty minutes until the cake gets a nice golden color.
9. Cool the baked cake, sprinkle with powdered sugar and serve with a scoop of vanilla ice cream, whipped cream or without anything. In any case - you will enjoy it.
