Creamy Carrot Soup

Ingredients:
- 4-5 bigger carrots
- 1 red onion
- olive oil
- 1 tsp ginger powder
- salt to taste
- black pepper to taste
- a few spoons of cooking cream
- organic lemon zest
- water or vegetable/chicken stock
- chili flakes, if you wish (ground chili)
Preparation:
- Warm the olive oil in the pot in which you will prepare the soup. Add chopped onions and salt and fry for a few minutes.
- Clean and grind the carrots or chop them finely. Add them to the pot with the onions and fry together.
- Pour water or stock over it and cook it covered with a lid for about 15 minutes.
- When the carrots are cooked, blend it all with a hand blender.
- Add the ginger, and lemon zest and cook briefly.
- At the end, add the cooking cream and serve it hot. For an extra kick, sprinkle the soup with chili flakes!
