Finest Christmas turmeric cookies

- FOR THE DOUGH:
- 227 g room-temperature butter
- 333 g crystal sugar
- ½ tsp salt
- 2 big eggs
- 2 tsp Nielsen Massey vanilla extract
- 2 tsp ground BIO turmeric
- 2 tsp BIO baking powder
- 300 g plain flour
- FOR THE SUGAR SPRINKLING:
- 100 g crystal sugar
- 2 tsp ground BIO turmeric
- Heat the oven to 190 degrees.
- Line two baking sheets with baking paper.
- Mix the butter, sugar and salt with a whisk or mixer until the mixture becomes soft and creamy.
- Add eggs and vanilla extract. Continue mixing until everything is combined.
- Add turmeric and baking powder and mix gently.
- Add the flour and mix gently until everything is combined. Clean the edges of the bowl with a spatula and mix everything together once more.
- Place the dough in the refrigerator to firm up, for 10-15 minutes.
- During this time, make the sugar sprinkle. Mix sugar and turmeric in a small bowl.
- Scoop out the dough with a spoon or an ice cream scoop and shape it into balls (weighing approximately 40 g).
- Roll each ball in a sprinkle of sugar and turmeric and place them on a baking sheet. Leave enough space between the balls because the biscuits will expand during baking.
- Bake for 9 to 11 minutes, until they start turning brown on the edges. Leave them to cool - they will be crispy on the edges and softer in the middle.
