Homemade apple strudel

- Pastry:
- 150 g flour
- a pinch of salt
- 3 tbsp sunflower oil
- 80 ml water
- juice from half a lemon

- Apple filling:
- 5 big or 6 small apples (choose the sort you like, Pink Lady or Idared are great)
- juice from one lemon
- 65 g mauritius demerara sugar
- 1/2 tsp cinnamon
- 4 tsp vanilla sugar
- 100 g melted butter
- 3 tbsp breadcrumbs
- raisins (to taste)
- caster sugar for the baked strudel

Preparation:
- Prepare the dough first. You can use a food processor, or you can do everything by hand. Mix flour and salt in a bowl. Add water, oil and lemon juice and knead the dough. Knead for 10 minutes, by hand or in a food processor, until you get a soft, smooth dough. Shape it into a ball, place it on a lightly floured surface and cover it with a cloth. Let it rest for about half an hour.
- During this time, prepare the apples: peel them, clean them and slice them thinly. Put them in a wide bowl, sprinkle with lemon juice, add sugar and cinnamon. Then add the raisins.
- Prepare the breadcrumbs: melt 3 tablespoons of butter in a small pan over medium heat. Add breadcrumbs, sugar and salt. Stir and lightly toast until golden. Set aside to cool a little.
- Heat the oven to 200 degrees. Line a baking sheet with baking paper.
- Melt the remaining butter in a small bowl.
- Roll out the dough first with a rolling pin, then move it to a tablecloth lightly sprinkled with flour. Now the stretching of the dough starts. Lightly oil your fingers and carefully stretch out the dough. It may crack in places but don't panic, just be patient.
- When you have stretched the dough enough - which means that it has become almost transparent, start assembling the strudel. Brush the dough with half of the melted butter, then sprinkle with breadcrumbs and add the apples. Gently close the ends of the dough and 'roll' the strudel. With the help of a tablecloth, transfer it to a baking tray.
- Spread the rolled strudel with melted butter and bake for about 45 minutes, or until it becomes golden brown.
- Take the strudel out of the oven and let it cool for about 20 minutes before serving. Sprinkle with powdered sugar, cut into generous slices and enjoy.
