Homemade Hummus with Harissa spices

Preparation:
  1. Mix the tahini paste and lemon juice in a mixing bowl. Mix for about one minute until the content of the bowl gets smooth and creamy. If the paste sticks on the edges of the bowl, sweep it down and continue mixing for about 30 more seconds.
  2. To the mixed tahini add olive oil, ground garlic, salt, and pepper to taste and keep mixing for 30 seconds. Sweep the paste from the edges of the bowl to the bottom and mix for 30 more seconds until the content gets evenly mixed.
  3. Add the washed and strained chickpeas gradually into the mixture and mix for 2 minutes. If you see that your mixture has clumps, keep mixing and gradually add olive oil until the mixture gets smooth.
  4. Add ½ teaspoon of beetroot powder, curry powder, spinach powder, or garam masala, depending on the color and taste you wish to achieve in your special hummus. Mix it until you get your perfect color and taste.
  5. To decorate it, you can sprinkle some olive oil, cayenne pepper, or sesame seeds. Homemade hummus is best to be used within 5 days and keep it in the fridge.

Recipe for homemade tahini paste

Preparation: 10 minutes

If you don’t want to add ready-made tahini paste to your hummus, here is a simple and quick recipe for how to make homemade tahini paste. Although tahini paste can be made of unhusked, sprouted sesame seeds, we rather use the husked ones.

Ingredients:

  • 1 cup (cca 140 g) of sesame seeds
  • 2-4 spoons of oil (olive oil or rapeseed oil)
  • Salt to taste

Preparation:

  1. Add the sesame seeds into a wide, dry pan at a middle temperature and toast them for 3 to 5 minutes, constantly stirring them until they start smelling nicely and really light in color (not brown). You have to be really careful here since the seeds can burn very easily.
  2. Move the toasted seeds to a baking tray or a big plate and let them cool down completely.
  3. Put the cold toasted sesame seeds in a mixing bowl and mix them for about 1 minute until you get a crumbly content.
  4. Add 3 spoons of oil and then mix for another 2 to 3 minutes, occasionally stopping to wipe down the bottom and edges of the bowl. Check the consistency of your tahini - the paste should be smooth and flowy.
  5. Try the tahini paste, add salt to taste, and mix for another 5-10 seconds. Keep the tahini paste in a well-closed container in the fridge. When stored this way, it can last up to a month. If you notice that the oil is separated from the sesame, just give it a good stir before using it.
