Pavlova cake with berries

Time Needed: cca 3 hours (baking/drying of cake layers included)

Ingredients:
  • 5 egg whites
  • a pinch of salt
  • 200 g of sugar
  • 1 teaspoon of starch
  • 1 teaspoon of alcohol vinegar
  • vanilla extract
  • whipped cream
  • strawberries and other seasonal fruits
Preparation:
  1. Pre-heat the over to 130 °C. Put baking paper in the baking tray and smear butter over it, to detach the baked layer more easily later.
  2. Sepparate the egg whites from the yolks. Whip the egg whites with a pinch of salt until firm, gradually adding the sugar, constantly whisking until the meringue gets smooth and glossy. 
  3. Add the starch and vinegar to the egg whites and whisk it gently.
  4. Draw a circle of 20 cm in diameter on the baking paper on your tray and place the egg white meringue in the circle, forming your future cake layer with a spatula. The cake can be formed neatly, or leave it in a messy shape - however you like it more.
  5. Bake it (or let's say dry) for an hour and a half in the oven, without opening the doors. After an hour and a half, turn off the oven, open the door a bit and leave the layer inside to cool down. All of this can be done a day ahead, and the cake will be even better.
  6. When the layer has completely cooled down, you can start assembling the cake. The basic recipe for a Pavlova includes whipped cream and various seasonal fruits, but if you wish, you can add vanilla pastry cream, which will make your cake even more luxurious. 
  7. Whip the cream and add a bit of vanilla sugar or vanilla extract. Put in on the cake layer and very casually place slices of strawberries, blueberries, blackberries, currants, cherries or any seasonal fruits you have. You can also use only strawberries, and it will be great.
  8. Put the cake in the fridge to cool down properly and serve it. Enjoy!
