Quick and easy homemade pickles
- 2 kg cucumbers
- 150 g salt
- 1 onion
- 500 ml alcohol vinegar (it's acidity is 9%, which is too intense and that's why we add water)
- 250 ml water
- 750 ml apple vinegar
- 50 g white sugar
- 3 tsp yellow mustard seeds
- 1 tbsp celery seeds
- 1 tbsp red paprika (mild like aleppo or you can experiment with very mild or more spicy. Make sure it's coarsely ground.
- 1 tsp turmeric powder
- Depending on the size and your taste, leave the cucumbers whole, cut into slices (crosswise or lengthwise for sandwiches), sticks, stars. Sprinkle them with 85 g of salt, mix well and leave in the fridge for 5 hours.
- After they have been in the fridge, wash them well under water and drain.
- Put the cucumbers, apple vinegar and alcohol vinegar, water, the rest of the salt (65 g) and all the other ingredients in a large pot over high heat.
- Cucumbers should be immediately put on the strongest fire and the biggest burner. When it boils, remove from heat.
- Place the cucumbers in clean, if possible sterilized, warm jars, and spread the liquid over the jars so that it covers the cucumbers. Close the jars and turn them upside down until they cool down.
- You can skip the last canning process if you plan to eat them within a month.
- Leave the cucumbers to stand for at least a week before consumption to allow the flavors to permeate.
- After opening, be sure to keep them in the refrigerator.

Tips for crunchy pickles:
- The smaller and fresher the cucumbers, the crunchier they will be. Larger cucumbers will soften more.
- Keep the cucumbers in salted water for 5 hours as indicated in the recipe, otherwise they will soften.
- Use small cucumbers and stack them tightly in the jar. We put two kilos of cucumbers in four 750 ml jars.
Pickles are excellent as a quick salad with various stews and goulash, and sandwiches are unthinkable without them.
Besides being everyone's favorite winter food, pickles are a natural source of minerals, vitamins and dietary fiber, and since they contain very little fat and a large source of water, they are the perfect snack.
