Torta Pasqualina

Savory Easter cake with spinach and curd

Ingredients:
  • 2 packs of ready-made (rolled) puff pastry
  • 600 g fresh spinach
  • 500 g curd or ricotta
  • 2 young onions
  • 3 tbsp ground parmesan
  • 3 eggs for the filling + 4 more eggs
  • 1 whisked egg for brushing the cake
  • a little bit of nutmeg
  • pepper to taste
  • salt to taste
  • a little bit of butter
Preparation:
  1. Clean the spinach and wash it well in cold water. Then briefly blanch it in salted water. Drain it well and cool it, then chop it finely with a knife.
  2. Mix curd or ricotta and 3 eggs in a bowl. Add chopped spinach, parmesan cheese, two finely chopped spring onions and spices to taste. You can add pieces of cooked ham to the filling if you wish
  3. Grease the cake mold with butter and line it with baking paper. Spread the puff pastry on the mold, cut off the excess with a knife, but leave a little edge with which you will later "close" the cake.
  4. Spread the prepared filling evenly over the dough, and make small indentations with a spoon in four places. Carefully break four eggs, one by one, into a cup and place them in the prepared cavities. These eggs will be baked together with the cake and will look beautiful when you cut the cake.
  5. Cut the second puff pastry into a circle and carefully and gently cover the cake with it. Now, gently pull the edge you left from the lower part of the dough over the top dough to 'close' the cake.
  6. Prick the dough lightly with a fork (so as not to pierce the yolk), brush with a whisked egg and bake in a preheated oven at 180 degrees for about half an hour, until it turns golden.
  7. When baked, leave the cake to cool and serve it as part of the Easter breakfast or as a separate meal with green salads.
