Baked kale with walnuts and parmesan cheese

Ingredients:
Preparation:
  1. Heat the oven to 180 degrees, clean the kale from the outer, damaged leaves and cut it into 10 larger pieces/cuts.
  2. Line a baking tray with paper and sprinkle with olive oil. Arrange the kale in a single layer and drizzle or coat it with olive oil. Then add salt, pepper and season with za'atar or Cafe de Paris seasoning.
  3. Place in the oven and bake for 8 to 10 minutes until the tops are lightly browned. Take out and turn each piece over with a spatula and continue baking for another 5 minutes.
  4. While the kale is roasting, lightly toast the walnut halves in a pan for 4 to 5 minutes. Move them to a cutting board and roughly chop them.
  5. Mix the walnuts in a bowl with the grated zest of half a lemon and finely chopped garlic. Add a little olive oil, a little salt and chili flakes to taste. Mix everything and at the end add the juice of half a lemon.
  6. As soon as you take the kale out of the oven, add your walnut pesto with a teaspoon and grated Parmesan cheese over everything. Serve immediately, while still hot.
