Mousse au chocolat
Valentine's Day @HARISSA
- 200 g high-quality dark chocolate
- 5 spoons cold water
- 5 eggs
- 7 dkg butter
- a little bit of cognac or Cointreau
- a few drops of vanilla extract
- pinch of salt
- Melt the chocolate with 5 spoons of cold water at low heat, stirring contantly.
- Move the melted chocolate to a kitchen robot (or a bowl), add the butter and mix.
- Sepparate the egg yolk from the egg white. Add a pinch of salt to the egg whites and mix it to a firm snow.
- Add one by one of the egg yolk to the chocolate mixture and keep mixing.
- Add the vanilla extract and cognac (or Cointreau).
- At the end, manually combine the snow from the egg whites with the chocolate mixture.
- Fill the mousse into serving glasses and let them cool down in the fridge for a couple of hours.
- Decorate with fresh raspberries.
